Eating Apple Chutney

This delicious apple chutney is so useful if you have a bushel from your garden. I was fortunate to have lots of this apples from friends garden. They make great personalised gifts for Christmas
hampers.



Ingredients:
  • 3.5kg eating apples, unprepared weight
  • 1.3kg sugar
  • 700g sultanas
  • 350ml white wine vinegar
  • 350ml red wine vinegar
  • 350ml apple cider vinegar
  • 2 tbsp mustard seeds
  • 800g onions, peeled and diced
  • 2 tbsp lemon juice
Method:

Wash, peel, core and chop the apples. As you go, place them in a bowl of cold water mixed with the lemon juice to prevent discolouring.

Place all the ingredients in a large jam pan, them bring to a simmer while stirring to dissolve the sugars.

Now continue to simmer until thickened. This can take around 1 hour, but keep stirring from time to time to ensure it doesn't catch at the bottom. 

Once thickened, pour straight into a sterilised jars. Leave to mature for as long as you can before eating or giving as gifts.
